Super Bowl Sunday is going to look very different this year. Like many of the previous holidays in 2020, we will have to adapt and overcome the challenges Covid-19 is creating for our favorite football holiday. There is still plenty we can do to keep many of our traditions alive!

One great way to shake up your Super Bowl LIV is to host a virtual watch party! Several different services allow you to stream the game and have all your friends and family watch together even if they aren’t physically with you. Teleparty is a google extension that can connect with Hulu live Tv to allow you and your friends to watch together. You can click here for their website.

If the weather is mild enough and you have enough space, you can also host an outdoor Super Bowl party. The CDC has provided several useful guidelines for the many upcoming Super Bowl parties, including:

  • Reminding guests to stay home if they are sick
  • Encouraging social distancing
  • Wearing masks
  • Cleaning hands often
  • Limiting the number of people handling or serving food
  • Limiting contact with commonly touched surfaces or shared items

Finally, and most importantly, the Super Bowl food! If you decide to host a virtual Super Bowl party, why not help everyone feel closer by having everyone try to make the same dish. Here is a SUPER tasty and healthy Super Bowl recipe.

INGREDIENTS

Chicken Fajitas

  • 3 boneless skinless chicken breasts
  • 1 onion, thinly sliced
  • 3 bell peppers, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 lime

Fajita Seasoning

  • 1/2 tablespoon chili powder
  • 1/2 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For Serving

  • tortillas
  • sour cream
  • Pico de gallo
  • avocado

INSTRUCTIONS

  1. Add the fajitas seasoning ingredients to a small mixing bowl and stir together.
  2. Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it into the chicken.
  3. Heat the oil in a large skillet over medium heat. Sear the chicken breasts for about 7-8 minutes on each side.
  4. While your chicken is cooking, cut the bell peppers and onion into thin slices.
  5. Once the chicken has finished cooking, remove it to a plate and let it rest for a couple of minutes. Add the bell peppers and onion to the same skillet over medium heat and saute for 4-5 minutes, stirring frequently.
  6. When the bell peppers are just about done sauteing, slice the chicken breasts into strips.
  7. Add the chicken back into the skillet, add a squeeze of fresh lime juice and stir everything together.
  8. Serve immediately with tortillas and extra toppings such as sour cream, pico de gallo and guacamole.
